PANCAKE RECIPE GLUTEN FREE, DAIRY FREE, REFINED SUGAR FREE

Who doesn’t love pancakes? I used to love the Kodiak pancakes. In fact, I would make them for my family probably twice a week, every week. Now that my husband and I are GF, it was time to get creative in changing things up in the breakfast department. Why shouldn’t you be able to enjoy healthy pancakes without all the added sugar/processed ingredients/gluten? Plus, a huge bonus, my daughter LOVES these pancakes- it is the fastest breakfast for a busy morning.

Side Note: When I have time, I will double the recipe and make a ton of them- then freeze them. On busy mornings, I can easily defrost them and warm them and give them to my daughter and husband. They keep so well and stay super fresh.

Ingredients:

1 cup of Bob’s Red Mill Grain Free Paleo Baking Flour

About ¾ of a Banana

1 TBSP of Maple Syrup

2 tsp of Baking Powder (use a clean brand such as Rumford)

1/2 cup of any kind of unsweetened nondairy milk (I use Elmhurst’s Almond Milk or MALK)

Vanilla Bean Powder (also an amazing superfood)- ½ tsp. or according to taste. But be careful, real vanilla bean powder is stronger than the liquid. If you use liquid, use about 1 teaspoon.

2 handfuls of fresh or frozen organic mixed berries. I will get a big bag of organic frozen berries in the winter and throw some in and if it is summer or warmer months- fresh berries or even cherries are a great addition.

*Bonus: Sometimes I will add 2 teaspoons- 1 tablespoon of chia seeds for extra fiber, good fat, and protein.

Instructions:

Mix all the dry ingredients together, then add the wet ingredients. At the very end, add the berries (always good to let the frozen berries sit out while you prep the batter). Make sure it is well stirred and heat a pan with some avo oil or coconut oil (which gives it a nice taste as well) and you are done! Feel free to serve these with additional fresh fruit on top, and a little maple syrup.

This recipe is SO easy and fast- you can alternate the fruit you put in according to the season and add cinnamon for a sweeter taste. Enjoy!
