Thai Basil Chicken Recipe

Bowl of Thai Basil Chicken with green beens, herbs, chickpeas, grains

(gf/df/refined sugar free/soy free)

Ingredients for 1 serving

  • 1/2T coconut oil

  • 2 garlic cloves

  • 1/4 cup of sweet onion (or shallots)

  • 1/8 cup of green onion

  • 1/3 of a red pepper (or any color pepper) - the more colors the better

  • 1/4 cup of green beans

  • handful of carrots (chopped or shredded)

  • 1/4 cup of red cabbage

  • Thai pepper or jalapeño (about half depending on your spice level)

  • a nub of ginger (as much as you want - fresh and grated- I add a ton to boost my immune system)

  • a ton of fresh chopped basil, sometimes I throw spinach in there!

  • honey (about a tablespoon - eyeball it depending how sweet you want it)

  • tamari about 2T depending on your flavor level. Remember you can always add more !

  • Brown rice or cauliflower rice as a base. And/or siete almond wrap.

*Disclaimer: I love a ton of veggies in my Thai Basil Chick! Adjust the recipe according to you and your likes.

*I do about 5oz of ground chick - but you can easily make this recipe veg friendly or add organic tofu/egg/tempeh.

*All ingredients are organic.

Heat up the coconut oil in a pan (medium to low heat)- once melted, add ground chicken and cook it until 75% done. Salt and pepper as you cook. Then add onion, garlic, peppers, green beans and carrots to the pan - sauté for a few minutes until soft. Then add cabbage and any other veggies you have left. Let it cook and soften up together - mixing continuously.

Then, in a small bowl, mix together tamari (according to taste) honey and ginger . Once mixed well - pour into the pan and add the hot peppers, then turn the heat to low for a minute or two. Add some chopped up Thai basil, stir and serve ! I serve it with cauliflower rice or brown rice as a GF option !
